Doughs made of biologic flours coming from the best mills; eggs made by the ‘renowned’ chickens happy to freely scratch about the farmyard; ragù and stracotti made with the meat of beefs, bred and butchered nearby, that are left to brown gently for three, four hours; fresh vegetables coming from biologic agriculture or, where possible, from local farmer friends; butter, ricottas, Taleggio and Gorgonzola chees, Grana Padano coming from local selected producing. These all are the ingredients of our delicatessen.
Our pasta is made in the old traditional way: just with eggs and flour, without adding any water. The preparation of the stuffing is made when needed, therefore it is necessary to make a reservation at least one day before in order to always have a surely fresh product.
